Lá dứa rửa sạch, cuộn tròn lại. Cho đậu đen vào nồi, thêm nước lọc và lá dứa đun sôi.
Củ khoai mì gọt vỏ, rửa sạch, bào thật mịn củ khoai mì và dùng tay vắt ráo nước. Cho vào thau củ khoai mì bột nếp, 1/2 muỗng cà phê muối, 1 muỗng canh đường, dùng tay trộn đều, hỗn hợp lúc này có bột và kết dính.
Dùng tay vo hỗn hợp củ khoai mì thành những viên tròn bé hay lớn tùy theo sở thích.
Đun nóng nồi nước sôi, cho những viên khoai mì vào luộc khoảng 3-4 phút đến khi viên khoai nổi trong, vớt ra rổ để ráo.
Nồi chè đậu đen sau khi ăn thử hạt đỗ mềm, thì cho những viên khoai mì vào nồi, thêm đường trắng đun lửa nhỏ để đường thấm đậu.
Đun đến khi vừa ý, nêm nếm lại tùy theo sở thích. Tắt bếp để nguội rồi cất vào tủ lạnh, dùng lạnh.
